It’s not really that bad, for raiding it’s quite easy. Maintain 2 dots, use wrath or lunar eclipse based on celestial alignment, and use starsurge and starfall as a builder. Pool Astral power if using starlord. That’s the basic rotation without cds

I prefer ConRo, but yeah, an addon is the way to go to get a new class rotation into your brain.
For ranged, you can’t go wrong with Balance Druid, Frost or Fire Mage, or Marksman Hunter. Beast Master has even fewer buttons than Marks, but I feel like Marks is easier to master in my opinion.
For melee, Frost Death Knight, Outlaw Rogue (yes, I’m serious), Havoc DH, Windwalker Monk, and Ret Paladin.
If you want an EASY tank, I would suggest Guardian Druid or Blood DK.
I can’t recommend any of the healing specs because I don’t know enough about any of them to really judge, but I will say Resto Shaman is rather strong right now, so if you enjoy healing and can figure that out, you’ll likely find a lot of groups.
I agree with everything you said but this, not because it’s hard, but because it’s one of the fastest paced rotations in the game. I think like the 3rd highest actions per minute
If you aren’t going to be pushing mythic raids just go whatever is cool to you. If you want to be meta do balance druid or fire mage. Both of those are very strong right now and very unlikely to get nerfed it seems. All classes are pretty simple to learn just takes some practice.
Be careful of hunter after the latest nerf they aren’t in a great place.
Not very confident in the two interns in charge of balance buffing us anytime soon either.
If you pick mage, be prepared to go the highest dps spec, which is fire at the moment. You can go frost, but are just gimping your dps. You are more likely to get into groups if you are a pumper dps. You are more likely to enjoy dpsing if you are dominating the damage meters. I’m sure the time will come where frost is the strongest, but that time isn’t now. Variety is a spice of life, so learning fire isn’t the end of the world and you will still build up experience with the class.

Havoc. I challenge this community to find an easier rotation. And while it’s the easiest rotation, it’s also one of the funniest specs to play.
Yeah I forget about Destro, although I do remember the broke Cata days when it had more dots than any other spec. Aff and Demo are significantly harder.
