It's not a false dilemma to clarify the scenario we are talking about. In the context of both this thread and your post, the only "destruction of Stormwind" worth discussing would be the one that follows logically from the conclusion of Sylvanas' plan. I'm not arguing Stormwind couldn't be destroyed by other means, but to suddenly change tack and start discussing *those* would be completely non-sensical.
Your informal fallacy is that "Stormwind can only be destroyed Sylvanas's plan if the plan works, or it will not."

That is the definition of a False Dilemma.

It would, in fact, be the very first time the Horde could stand against a unified Alliance. The entire history of Alliance/Horde aggression is that the Horde only wins against individual kingdoms/members of the Alliance. Once the Alliance gets on board with the common enemy thing, the Horde is consistently and repeatedly rebuked.
Sorry, who was holding back during Cataclysm? We know it isn't the Humans. The Humans were willing to kill every goblin to ensure Thrall was captured quietly.

I was bringing Nerzhul into this and it isn't nonsense. It is just one of many examples where your False Dilemma falls apart. The only way to destroy Stormwind is not, infact, conquering the entire Alliance first.

That is literally untrue re: The Horde being able to stand toe to toe with the Alliance. The Horde was equal in vanilla / tbc/ wotlk. The Horde was superior in Cata and had the Alliance's navy screwed over in the beginning of MoP. After SoO the Horde took a nose dive.
