[CS Lounge] Pining for the Fjords

Got the worst of my adulting done for the day: the yard is officially mowed. Looks like I’ll be pulling weeds and trimming shrubs in the rain tomorrow and Thursday, since I reserved a pick-up truck rental for Thursday to haul all the yard waste to the composting site. Then, Friday morning, I can spread the weed-n-feed that’s been sitting in the garage all summer. Should probably mark the limbs I want to prune from the maple tree in the back yard, as well.

I’m trying to set myself up for spring. I let the yard go last year, so when the snow melted it looked like crud and I got kinda hopeless about it. I’m hoping that if I get it cleaned up this autumn, I’ll be more motivated to maintain it next spring.

I allow myself fast food once a week. I try to keep it less unhealthy. Usually a chicken place or TexMex.

I actually did a Zalad yesterday.

Usually, I prep my food for the week on my weekend. Then I allow myself fast food on Tuesday and Thursday for Critical Role and Talks Machina. :nerd_face:

It’s funny working from home. To eat fast food, I’d have to actively decide to go out, and the comfort of home normally appeals more unless I have a craving. Even the days I have chemo (like today), I have it in the mid-afternoon so I’ll have already eaten at home, and both of the drugs they’re giving me have side-effects of nausea that I get a pill or a steroid to handle, so eating is kinda “yeah, that time, what can I stomach”.

Of course, I don’t claim my home-cooked is particularly healthy. I had pop tarts for breakfast. =P

What’s it like to watch those live consistently? LOL I am almost always behind. I have 30 more minutes on last weeks episode, then talks and I still need to listen to episode one of book five of a certain podcast I can’t really say the name of here. :smiley:

took a trip into the nursing home that my father is expected to stay at, just to get a rough idea of where it’s located at.

it’s not too difficult to get there, just having to take two different buses will likely prove somewhat taxing on my energy. xP

but the place is really nice. they do a lot of fun activities, their menus for the seniors are quite packed…i think he’ll like it there. i’ll have to get in touch with the worker at the hospital, once the paperwork is ready to be finalized, so we can make plans to get his wheelchair and walker ready for him.

decided to try visiting him, as i figured he’d probably just be getting back from his kidney dialysis…only to learn, they hadn’t taken him down yet. (i may have to get the nurses station’s number and call ahead for future visits. i was under the assumption, that he gets taken for dialysis every Mon/Wed/Fri, first thing in the morning.)

but i got home just after 1:30 this afternoon…put my head down for a nap…next thing i know, it’s 4:30 in the afternoon. needless to say…i crashed. x_x

picked up some Crackerbarrel ready-to-make pasta earlier this afternoon…only to forget the milk and butter, so i’ve now got fries and nuggets on for dinner. pasta for tomorrow…for now?

How can you Cosplay Darth Vader without a red saber? That ruins Hallowe’en.

I already have mine. It just means that too many people farmed the black crystal.
Besides, they sell Vader sabers specifically.

Instead I fell asleep at like 11 pm anyway. Sadly, I still haven’t logged in at all since Classic launch (even though I added time). Really not enjoying my current work schedule - 12-9 all week and leaving me exhausted so I don’t want to do much when I get home, but don’t want to get up early to do stuff either. I think soon we’re hiring someone who will be doing a lot of the shifts I’ve been getting, and someone else is leaving by the end of the year, which should let me get back to the early shifts I prefer.

I can’t believe I’m even saying that though. Always been such a night owl. There was a time I’d have loved 10-7 and been ok with 12-9. Am I getting old or something?

Might try this West African Dish called Ghanaian Jollof Rice. Looks quite easy to make.

Ingredients

  • 2 large yellow onions, roughly chopped
  • ⅓ cup vegetable oil, plus 2 tablespoons, divided
  • 14 oz diced tomato, 2 cans
  • 6 oz tomato paste, 1 can
  • 1 habanero pepper
  • 2 teaspoons curry powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • ½ teaspoon mixed dried herbs
  • 3 chicken bouillon cubes, crushed
  • 2 ½ cups long grain rice, rinsed
  • 1 cup frozen mixed vegetable
  • 1 ½ cups water

Directions

  1. Add onions and 2 tablespoons of oil to a blender and pulse until smooth. Transfer to a medium bowl.
  2. Add the diced tomatoes, tomato paste, and habanero pepper to the blender, and pulse until smooth. Transfer to a separate medium bowl.
  3. Heat the remaining ⅓ cup (80 ml) of oil in a large, heavy-bottomed pot over medium heat.
  4. Once the oil is shimmering, add the onion puree and cook until the water has cooked out and the puree is starting to brown, about 10 minutes.
  5. Stir in the tomato puree and add the curry powder, garlic powder, ginger, dried herbs, and crushed bouillon cubes. Cook for 20-30 minutes, stirring occasionally, until the stew has reduced by half and is deep red in color.
  6. Add the rice, mixed vegetables, and water. Bring to a boil, then reduce the heat to low and cover the pot with foil and a lid. Simmer for another 30 minutes, until the rice is cooked through and the liquid is absorbed.

It’s a customizable recipe, so taste the sauce as you go along to make sure it’s up to your standards. And jasmine rice is the best rice to use

Would be a nice change from my Asian rice recipes.
