Are we talking instant or real Japanese ramen? If instant I like spicy chicken but for real Japanese type ramen it is beef.

That is a good and important question since they are light-years apart. Though you can adjust the instant garbage to make it palatable, with some skill and money.

Roast Chicken > Chicken
Roast Beef > Beef

Roast Beef is more flavorful than Roast Chicken, but I will never not add some diced grilled chicken breast to any variety of chicken ramen.
