Only receiving ‘Ranged Dps Challenge’ option at the Jade Serpent (Yu’lon). Which I can’t start, as I am a warrior. No option for Tank or Mdps, or Healer(Not relevant to me though).

I had to abandon the quest, pick it back up, and fly back to Xuen. I didn’t talk to Wrathion. I went straight to the gong. It gave me credit for talking to him and started the RP to hostile Wrathion.
If you want tank, go to niuzao. If you want melee, go to xeun. Each temple has a challenge directed to a certain spec. You only have to do the one for yours. You only talk to wraithion at the others.

Quest was different from guide, so I assumed the worst.
Yu’lon - Ranged DPS
Xuen - Melee DPS
Nizou - Tank
Chi-Ji - Healer
You need to go to the Temple of the White Tiger, the Temple of the Jade Serpent doens’t provided the melee challenge, only the ranged DPS one.
