Cannot change raid/dungeon difficulty after reset

No need to mess with War Mode or go to Org.

Can't Set Mythic Difficulty for Dungeons or Raids While in War Mode

Mythic is grayed out under Dungeon and Raid difficulties while War Mode is active. Turning off War Mode makes the options available again. We can still set the Mythic difficulties with War Mode active using /run SetDungeonDifficultyID(23); and /run SetRaidDifficultyID(16); , which adjusts the difficulties as expected, but the options to do so in the UI are simply grayed out.
