By next week I should have Pathfinder, honestly I wouldn't mind grinding it again in Shadowlands

It’s only a grind for people who you know… complained “this expansion is bad” quit and comeback.

Play the game normally like most people have and flying isn’t a grind

This is my opinion on it also. It wasn’t much of a grind if you played the game normally. It took maybe a week. Really not that grindy and the timegate is fine, we get to use our ground mounts we never see.
