I would say none, because priest is so boring to level.

I’m joking (maybe).

Mag’har are cool because they are the only orc priests available. I might race change my priest to one. My priest is a belf but I’m kind of bleh about them too.

Undead Holy Priest with the shiniest, Light-loving priest transmog you can get is fun too. If Shadow Priest is more your thing, Forsaken is one of the most iconic races for that spec. This is another race I’m considering changing my priest to. I really like the fem Forsaken casting animations.

You don’t like belves, but they make a lot sense lorewise because of the Sunwell…or trolls because of the loa. Zandalari trolls can even pick a loa and change if needed, which is kinda neat for a priest. Tauren priests have good lore as well.

The idea of a goblin priest that isn’t just trying to make a buck off of their faith in the Light is interesting. I think it’s fun playing the oddball who’s atypical of their race. Nightborne would make for another atypical priest. You could be a really old nightborne who remembers Elune worship and wants to get back to that, or a really young nightborne with interest in learning about this thing called the “Light” you keep hearing about.

So…that probably isn’t much help because a lot of the races have priest potential. I would check how the priest transmogs look on different races to see if that helps narrow it down.

To me Troll Priest is an iconic unit in Warcraft. Regular or Zandalari. Blood Elf also but that was actually an iconic Alliance unit.
