If you plan to do engineering from the get-go, I’d advise going mining. Just to save yourself some money. It’ll be rough having to buy everything for engineering. Perhaps later one in your classic lifespan, once you have your mounts and some gold and can switch over?

Mining/engineering at start. Once the economy matures and you yourself gets some gold to burn, drop mining (or level up a farming alt for it) and just buy the ore/bars on AH. Then pick up tailoring. Just remember to save the cloth through your leveling process to power-level tailoring later on.
Also, if you want to be hardcore about. Level up engineering. Take Gnome specialization, make all your BoP’s and the drop it, level it up again, and take Goblin specialization and stick with that. You’ll have the best of two worlds, although it is a lengthy process.

What is it about engineering makes it good for pvp exactly?
yes engineering is THE pvp profession.
there are trinkets / gear that will put you above everyone else in pvp. Top pvpers use them all the time. grenades are fun too, but too expensive to throw around a lot for fun outside of occasional world pvp.
You get a lot of extra CC tools and whacky items to help you out of sticky situations, or straight-up oneshot people!
