I always laugh a little when people bring up the idea of vegan Tauren. They ARE hunters, they wouldn’t just kill a creature and leave its meat to skin it. They’re the type that use every part. Their entire nature is the hunt.
As for Night Elves, I doubt it. Otherwise after all this time they likely would have evolved the fangs/baby tusks out if they didn’t need them for something. They’re again the type that would hunt for something and probably use all of the pieces of it. Just because they’re nature buffs doesn’t mean they don’t believe in the natural cycle of life, at least in my opinion.
Have you seen Tauren camps/ The Bluffs? Roast Kodo and Plainstrider everywhere.
Quests from Tauren mentioning their nomadic past also usually mention them going hunting as well.
Night Elves, you usually dont see meat cooking, but there are quests that offer stuff like Spider Leg recipes, so you do see SOME meat eating from them as all. That’s the only example I can think of though.
you could probably think of the night elves (especially the druids) in a similar vein as the na’vi. they have a great respect for nature and animals even though tyey still eat meat. the animals they kill for food are likely honored for their “sacrifice”
Eating meat is natural especially if you are a carnivore or an omnivore which all playable races fall under. So, no night elves in general are not vegan.
Roleplaying a vegan Night Elf is just fine. It’s just a game limitation that what we know of Kaldorei cooking involves spider-legs. etc. and that’s an artifact of how cooking was implemented.
It’d be nice if they’d add a vegan option to the WoW cooking profession, then you could say…

Nelves and nature are a little different then other fantasy elves. They are about the entire cycle of nature both life and death. Things die to nourish the bodies of other animals and the forest so they can thrive then they die and the cycle continues. It is the whole point of Druidism, to make sure the cycle continues smoothly.
