so, clearly McCree is not a person that throw threats around, he is stoic yet playful… but when Sombruh asks if ‘Jessie McCree’ is even his real name

he sounds quite hmmmm… very specific and serious… too serious for his character
“Don’t know what you heard, but my name’s not Joel. Best remember that.”
i think that ‘unfinished buisness’ he always talk about will end up badly for Joel, because McCree is an avenger - why? because instead of joining his friends (that he clearly care about - he released Echo) he is going to settle old scores by himself first

Joel Morricone is a freelance reporter that many people think is McCree’s pen name.
Joel could also be a reference to the fact that while the game was being developed, McCree was called Joel.
