I mean, Dee Bradley Baker is pretty insane too. AKA the guy who does the hamster noises for Hammond. He’s also done Perry the Platypus from Phineas and Ferb too, along with both Aapa and Momo from Avatar: The Last Airbender. Dude’s nuts with the animal noises.
Mercer’s good too, though. He has a really impressive range, and you can especially see that range in Critical Role. He’s a lot more active in the D&D community too, from what I’ve seen. Even had to address a problem that was arising in D&D where people who were new to D&D and whose first exposure to it was Crit Role, they were expecting all D&D games to be like that. So he addressed that which was cool.

I agree on Mercer, but not for the reason I imagine OP is going with.
It’s not because I think he does McCree better than others do their characters.
It’s his ability to constantly switch roles and voices without any sign of having to think it through or pause to consider what he’s doing.
If you haven’t heard of it, check out “Critical Role” on YouTube. It’s Matt Mercer’s D&D game that’s been going on for years (And streamed on Twitch, put on Youtube for the last four).
The whole show bleeds talent (the players include our very own Jaina Proudmore and Illidan Stormrage from over on WoW/Heroes) but Matt is in the DM’s chair and so literally every character that shows up that’s not one of the seven players or the occasional guest is him. He plays villains, heroes, men, women, different races, different ages and does it all without mixing accents or crossing things.
If we’re talking just a personal favorite I really love Taliesin Jaffe’s work as limited as it is (Percy, Molly, Caduceus on Crit Role, Blank in Street Fighter, etc)
I’d say it’s between Christopher L. Parson (Junkrat) or Sahr Ngaujah (Doomfist)
Mcree sounds a bit soft for an old western style hero, voice is too clean
