The simple answer is that the English version is made to cater to an English audience.

“Kitsune” sounds all mystical and cool to someone who doesn’t know better, fox would just sound like an ordinary old fox and wouldn’t automatically invoke the vibe Blizzard is going for. Dragon on the other hand, is a known mythical creature to all English speakers and therefore doesn’t need to be translated to sound magical.
