try this.
jump on somebody else, make them retreat, let them, stalk them and when mercy shows up, jump on her. (alternatively kill them, wait for the mercy to come rez, and then kill her)
otherwise you just have to catch her unaware when she’s frantically moving around, it’s hard to keep an eye on everything when you’re buzzing about like a dragon fly, might just fly into a rocket powered fist.
Get to high ground. Whoever your target is, always get to High Ground. Doomfist is really deadly from an altitude.
After you see Moira or Mercy, dive them with Seismic Slam. Once your seismic slam connects, uppercut them and pump some bullets into their face. DO NOT USE YOUR ROCKET PUNCH YET.
The slam + uppercut + headshot will usually do the job. But, if you can’t secure the kill, use your Rocket Punch after you’ve successfully baited out their mobility skill, then you can chase them off.
Try to position yourself between mercy, and whatever target she’s pocketing or currently facing
When she GAs she’ll have to GA past you- giving you an opportunity to attack her.
Easier said than done however.
Mercys mobility, and the context of how it works, means you’ll be putting yourself into more danger than even normal for doomfist.
Sometimes it’s easier to go after her target, than her.
Stay away if you go after her you will invoke battle mercy wrath every time she valks.
Mercy is incredibly predictable and team reliant, if you take those two factors out of your play, shes dead no matter who you play. Precit her GA targets, predict her GA path, cut her off, force her to put GA on a cooldown, Uppercut combo after she flies. So many EZ ways to kill mercy as doom.
May be the obvious answer, but just wait out their mobility CDs. Both are pretty bad targets for your ult too
Same way you get Ashe and Widow. Punch to dive on them then uppercut, use your E to chase them when they use their escape
Wait for someone else to do it.
That’s what my team usually does with the healers.
Whenever a Mercy tries to fly I will just start doing calculations in my head because I’m asian. For example :
Their mercy just flew 2 meters off the ground times the amount of damage i just did 98 they’re gonna fly 196 meters away divided by her teammate Ashe’s health which is 25 so I’m gonna have to aim approximately oh wait my team shot her.
Get the drop on her. If she sees you, she’ll like dash away from your punch. If she doesn’t see you, hope she doesn’t hear your loud af charge up, and don’t miss.
Why? Doomfist is like one of the coolest heroes in the game.

You don’t need to run from somebody you can kill yourself6
If the Mercy is good, she will not die to you. Simple.
If she is not good tho, just camp dead teammates and flank her from behind.
Use Meteor Strike on her ally corpses or place it in her path during GA.
But again, that only works on bad Mercys. A good Mercy will rarely die to Doom. Too much mobility, not to mention with Superjump you can’t even Slam her, so go for an easier target.
