Just saw the grand finals starts at 2AM for me. If I miss it live but watch a replay, can I still get the Symmetra grey skin?

There’ll be encore games broadcast on the OWL channel, you can get skins/tokens from watching those.

You cannot watch the video-on-demand of past broadcasts, but as Bees! mentioned there is a series of live-stream encores that will succeed after each live stream to earn rewards from.
