So necro/druid pets are supposed to inherit 100% of your stats but does this cover EVERY stat? If I am capped on resistances/armor are the minions also capped? If so then there are a lot of points that can be saved on the paragon board. Or is it just specific stats that get transferred to minions?

There are a few exceptions yes. On wowhead there’s a list of what they do and don’t inherit.
From what I see on this page you linked it doesn’t say anything about inheriting armor or elemental resistances. Or is it just not listed? Wish blizzard would just say what is shared between you and minions.
I can’t find the answer to that question either, but if you take off an item with an Armor stat it DOES NOT change the Warrior/Golem Armor bonus in the Character page.
My guess is that minions inherit 100% of player stats, exactly like it says–but then there are ways to increase their defense. I’m just following a build guide & so far having no issues with anything.
*although I will say that the Necro has been quite a bit more boring than my Rogue or Barb toons.
