Playing on a macbook pro 14in 2021 hooked up to an external 2k monitor, but the highest resolution I can play at is 1080p on fullscreen and windowed mode. How do I fix this so I can play at 2k resolution?

Try to set it manually:
Go to Finder, hold the Option Key while you click in the Menubar “go to”, there pops the Library-Folder, in that you go to Application Support > Blizzard > Diablo III > D3prefs.txt (full path: /users/[YOUR_USERNAME]/Library/Application Support/Blizzard/Diablo III/)
Open it with TextEdit, there at the bottom somewhere you will find the resolution, change it into your pref resolution, save, close. After that open the information for the file (Command + I), set the checkbox to “locked” (don’t have it in English, should be something similar).
Keep in mind, that from now on every change ingame like sound, shadows or otherwise will not be saved, cause game cannot override d3prefs.txt, unless you unlock it in finder again
