I am on Ps5, normal difficulty. I killed the countess multiple times and the treasure chest that usually drops a ton of coins does not open amymore… I don’t care much about the gold but I think it’s a bug hence this report.
It only opens when you complete the quest.

I suspect what you are doing is closing D2R and then starting up again. The Countess will be there again, but the chest will not open.
As I remember, you can regenerate the quest by starting a new game with your character in Nightmare, Hell or Normal, any different difficulty level than the one where you already completed the quest. However, to get to the Countess, you have to play through the first half of Act I before you get to that quest.
There are better ways and places to farm.
